IN PHOTO: Tinumkan (Registered Property, Municipality of Ibajay, Aklan)
Tinumkan is traditionally prepared by the Ibajaynons during special occasions such as fiestas and cultural fairs. Its main ingredient is ueang or freshwater shrimps (Macrobrachium rosenbergii) caught using the sungya or bamboo fishing net. The meat of the ueang is pounded in an eusong (traditional wooden mortar). Young coconut meat, known as gawod, together with various seasonings are gradually added and pounded together with the hae-o (traditional wooden pestle) until the desired mixture is achieved. The pounded mixture will then be placed onto a prepared banana leaf (or hagikhik leaves as a substitute) and wrapped before being placed inside a clay pot. The tinumkan is steamed for about 15 minutes before serving.
