IN PHOTO: Binayabsan nga Baboy in Lambunao, Iloilo (Registered Property, Municipality of Lambunao, Iloilo)
The Binayabsan nga Baboy is one of Lambunao’s flagship dishes. It is prepared using young guava leaves and meat from native pigs, preferably pork belly. The other ingredients include ginger, onion, native coconut vinegar, a cup of water, and salt. All of the ingredients are mixed together in a clay pot (palayok) and left to boil until the natural oil of the pork comes out. The guava leaves not only provide the dish's distinct flavor but also help eliminate the strong odor of the native pig meat. The dish is traditionally prepared by the indigenous people of Lambunao during special occasions, such as the Binanog Festival.
